Abstract

Nipa sap is one of potential materials to be processed into bioethanol. Availabilityof nypa palm land in Indonesia and a fairly high sugar content (15-20%) makesnipa sap has the potential to be processed into bioethanol, so that produce an usefuland high valuable product and then in education, that is give data process fermenta-tion of nipa sap with comparison of pH, concentration of yeast and scale of fermen-tation. Through a fermentation process using yeast Saccharomyces cereviceae, glucose is converted into bioethanol and carbon dioxide. Starter preparation is doneby the yeast Saccharomyces cereviceae inoculum in the 10% of fermentation me-dium so that yeast is able to adapt and ready for fermentation. Fermentation takesplace in batches with a volume of 50 liters of fermentation medium, variations inthe pH 4.5, 5.0, 5.5 and variations of fermentation time of 24, 36, 48, 60 dan 72hours and then concentration of yeast 15, 20 g/l. The stirring speed of 200 rpm andtemperature of fermentation at room temperature (25 - 30 0C) were selected condi-tions. Bioethanol concentrations were analyzed using alcoholmeter. The process ofoptimum fermentation conditions indicated in the addition of starter pH 4,5 andfermentation time of 36 hours having the initial sugar concentration of 221,163mg/ml. Bioethanol concentration obtained in this condition is 14% (v/v).
