Pengaruh Penggunaan Resin (IRA 900) pada Proses Pembuatan Sirup Nira Nipah (Nypa fruiticans Wurmb)

Abstract


Nipah sugar syrup is solution contains sucrose in high purity. Nipah sugar syrup,beside of containing sucrose, is also contains of fructose and glucose mixture.Generally, this nipah sugar syrup can be used as alternative of replacement of sugarutilization in crystal form. The aim of this research is to learn about the influence ofIRA 900 resin utilization in process of making nipah sugar syrup (Nypa fruiticansWurmb) in order to use nipah sugar as one of sweetener source. The result of thisresearch showing that addition mixture of ascorbate acid and citric acid 1% canprevent the increase of color during vaporization process. Addition of bleachingagent gives non-siginificant effect, so it can’t influence of reduction sugar contentin nipah sugar because of neutral pH range is 6,96 so it can’t happened inversion.And also, sucrose content with addition bleaching agent gives unreal influent withsugar sucrose content in control (without addition of bleaching agent).In process ofdecolorization, the best result is in process of using double decolorization, firstusing active carbon and then continues added IRA 900 resin which is the utilizationof both process results 69,23% of decolorization.
